Peanut Butter Cookies

 Peanut Butter Cookies

  • 3 cups all purpose flour
  • 1 1/2 cups granulated sugar, divided
  • 1 cup packed brown sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup vegetable shortening
  • 1 cup creamy peanut butter
  • 1/4 cup milk
  • 1 1/2 tsp vanilla
  • 2 eggs
Preheat oven to 350. Line baking sheets with parchment paper. In a bowl combine flour, 1 cup sugar, brown sugar, baking soda, salt, shortening, peanut butter, milk, vanilla and eggs. Mix on low speed until a stiff dough forms. Refrigerate for 10 minutes. Place rest of suger in a shallow dish, Using a disher (small ice cream scoop), scoop dough and roll in sugar.
Place on sheets, flatten with a fork. bake until golden brown, 10-12 minutes. Let cool!
